Advanced Diploma In Cooking Techniques Programme

1. INTRODUCTION

The Advanced Diploma in Cooking Techniques Programme is a 2-year course, excluding internship and other activities. The overall programme is designed to equip students with in-depth technical skills in food preparation within hotel and restaurant kitchens, as well as management competencies necessary to meet Level 5 requirements under the national Vietnamese Qualifications Framework.This competency-based approach programme is built both on advanced curriculum content and Pegasus indepth experiences gained from our highly successful implementation of the Commercial Cookery and Advanced Diploma in Hospitality Management programmes under AQF from the Australian Government. Pegasus Advanced Diploma in Cooking Techniques focuses on developing essential advanced professional skills alongside communication abilities and teamwork in various hospitality and food production settings.

Throughout the 2-year study period, students will undergo English language training, progressing from General English (aligned with the CEFR) to English language abilities used within professional Culinary environments. This ensures students develop and refine their English proficiency in a professional setting, enabling them to meet the language requirements of international-standard workplaces.

The remaining part of the course is a 4-month (or potentially longer, upon request) internship at 4-5 star hotels and resorts. Students will practise, learn and gain hands-on experience in a high-quality standard work environment.

The training methodology integrates in-person learning with online learning materials available on the college’s e-learning portal. The curriculum is carefully structured to combine hands-on skill practice with in-depth theoretical knowledge. Student assessments will be conducted using various evaluation methods, including practical skills observation, project assignments, third-party reports, quizzes and written exams, ensuring a comprehensive evaluation of the competencies acquired.

As a leading hospitality college, students are required to wear the official college uniform throughout their study period. Uniform details are specified in the Student Handbook.

2. COURSE OUTLINE
Intake schedule:The Fall intake begins in September/October each year; The Spring intake begins in March/April each year. Official start dates will be announced to registered students.
Duration:24 months of study at the college (including public holidays and semester breaks) and additional time for internships and graduation assessment.
Class Size:18 - 20 students/class (maximum).
Entry Requirements:High School Diploma or equivalent; OR
Graduates of an Intermediate-Level programme (Trung cấp) plus one of the followings:
• A certificate of completion for the required high school academic programme.
• A certificate confirming completion of the required high school knowledge components.
• A certificate confirming successful completion of the required high school knowledge components through exams.
Other requirements as per the college’s admission regulations.
English Proficiency Requirements:• Not mandatory.
• Students with English proficiency will be given priority in scholarship consideration and admission.
Tuition Fees:As indicated in the college’s annual fee structure and policies.
Other Fees:• Student Uniforms (academic and physical education).
• National Defence and Security Education training fees.
• Essential learning materials and personal study tools.
Total Learning Modules:33 Modules
Training Hours Per Week:Average of 20 hours / week (excluding extracurricular activities)
Total Training Hours:2,140 hours (equivalent to 78 credits).
Teaching Methodology:In-person training, guidance, hands-on practice and real-world simulations. Course learning materials are available in Pegasus’s online hub.
Training Approach:Competency-based learning.
Language of Delivery:Vietnamese.
Internship:• 4 months or longer (upon request) at 4-5-star hotels/resorts.
• Internships are arranged by the College based on students' competences.
• Hotels may provide financial support during internships, however, this is not guaranteed.
• The College will select and recommend the most suitable internship placements.
Qualification:Advanced Diploma in Cooking Techniques issued by Pegasus International College recognised nationwide under Vietnamese law.
Scholarships:The college offers scholarships for eligible students. Applicants must submit a scholarship application following the college’s guidelines. Scholarship amounts are determined based on applicant’s academic performance, his/her commitment and the college’s annual scholarship scheme. Scholarship applicants must complete an interview before final approval.
Career Opportunities:Graduates can work in food production facilities, restaurants, ho-tels and resorts in various roles, including but not limited to:
• Commis Chefs and Prep Chefs specializing in:
o Stocks, sauces, and soups.
o Appetizers, salads, and cold dishes.
• Cook (in general)
• Chef de Cuisine in Asian, Western, banquet and pastry cooking.
Depending on individual experience gained, graduates may ad-vance to higher positions for example:
• Team Leader, Mid-level Manager.
• Owner of a food service business or restaurant.
• Hotel/Resort Operations Manager or Owner.

    GRADUATION REQUIREMENTS

    To be eligible for graduation and receive the Advanced Diploma, students must meet the following requirements:

    • Successfully complete 100% of the required modules listed in the programme. It includes the following requirements:
    • Students must attend the required minimum number of direct classroom hours set for each module.
    • Successfully pass all required assessments as per the college’s regulations.
    • Complete the internship as required by the programme.
    • Comply with the rules and regulations of the organization where the student is interning.
    • If a student terminates the internship contract /agreement prematurely without a valid reason or is dismissed due to disciplinary reasons, they will be ineligible for graduation.

    No violations of laws, disciplinary actions or breaches of the college’s regulations during the period of study.
